LEMON & YUZU GLAZE
One of the latest products in the Alvena 2023 catalog is the lemon & yuzu glossy glaze: our Research and Development department, following the latest market trends, has combined two seemingly very similar but different fruits: thelimone and yuzu. The lemon is an oval or round fruit with a thick, yellow peel and acidic, juicy flesh. It is used in cooking for its distinctive flavor and its ability to balance the flavor of other ingredients. Yuzu is a citrus fruit native to Japan, with a rough peel and thick, juicy flesh. It tastes similar to lemon, but with a distinctive citrus note that makes it unique. It is used in Japanese cuisine for its intense flavor and its ability to add a fresh taste to dishes such as sushi and ramen. Both fruits are a good source of C vitamin and can be used in many different ways in cooking.
The mix of the two citrus fruits creates a glossy glaze with an unusual, tart and fresh flavor that is a perfect contrast to the sugary flavor of cakes, parfaits and ice cream.
The glossy frosting, designed for decorating cakes and parfaits, maintains an excellent gloss even at -20°, while the temperature of use is about 25°-35°C.
