Complete semi-finished powder for milk/cream flavored ice cream mixes, which enhances the characterizing flavours.
Dose and method of use : 33% (330 g ICEMIX + 670 g hot milk or hot water) or (136 g ICEMIX + 608 g fresh milk + 145 g cream + 86 g sugar + 11 g Sucrogel + 6.5 Neutrocrem + 7.5 g invert sugar = 1 kg).
Disperse the ICEMIX in hot milk or hot water with an electric mixer; let the liquid mixture rest for at least 2 hours before freezing. Mix Neutrocrem and Sucrogel Alvena and insert into the pasteurizer, after having inserted the milk. Once approximately 40°C has been reached, add the mixture of sugar and ICEMIX and the inverted sugar; finally insert the cream as the temperature drops to around 40°C. Leave to rest for at least 4/6 hours for correct maturation.
Storage: 24 months if stored in its packaging in a cool, dry, well-ventilated place away from sources of light and heat at a temperature not exceeding 25°C.
