Complete product to be used in yoghurt, to obtain a yoghurt ice cream without added sugar, sucrose, sweetened only with fructose, without flavourings. An ice cream containing from 75 to 80% fresh yogurt, rich in live lactic ferments,
with very low lactose content.
Dose and method of use : 24% (240 g yovitality F22/24 SA + 760 g fresh whole yoghurt) 22% (220 g yovitality F22/24 SA + 780 g fresh whole yoghurt) for soft machines. Use whole yogurt making it liquid using an electric immersion whisk before adding and dispersing the YOVITALITY F22/24 SA with the same whisk. Leave to rest in the refrigerator at a positive temperature for a few hours before freezing. This process allows us to obtain a product with a reduced lactose content (less than 0.004%) thanks to the action of the yogurt ferments which make the ice cream suitable for those intolerant to lactose. The ice cream obtained is creamed in any ice cream machine, placed for sale, together with normal ice creams in the windows and on the counters. For recipes see technical data sheet behind.
Storage: 24 months if stored in its packaging in a cool, dry, well-ventilated place away from sources of light and heat at a temperature not exceeding 25°C. See data on label. If stored in different conditions, evaluate the state of conservation before use.
