Stabilized sugar syrup for fruit granitas.
Dose and method of use : 25% (see recipes in the data sheet). Mix the water with the blended fruit or the other ingredients, add the GRANIFAST Z and mix well with an electric mixer. Then place the self-freezing mixture obtained either at T - 18/- 20 °C for 6/8 hours or in a blast chiller for approximately 20 minutes, then transfer the granita obtained to an operating temperature of -6/-10 °C.
Storage: 24 months if stored in its packaging in a cool, dry, well-ventilated place away from sources of light and heat at a temperature not exceeding 25°C.
Packaging: 7 kg net cans each.
